The Linguale

The Linguale Del Ben is a variation of the classic Cotechino, with the addition of the tongue of the pig. The Linguale lends itself to be savored with the well-established in our Region, contours of brovada or lentils or even with more daring combinations. It should be prepared by cooking it like the Cotechino, in boiling water for at least three hours.
