The Cotechino

Whole piece or vacuum sealed

Lean meat of ITALIAN pork, lard and medium-grained ground pork rind are expertly spiced and bagged.

The cotechino is then dried for at least one day. The final weight is about 500 grams.
Once cooked its consistency is soft and the delicate taste, goes well with a slice of local Polenta or the typical Brovada or also with lentils.
